Customers at the Spencer Hy-Vee store may be a bit confused when they look for the perfect Iowa chop to grill during October Pork Month. But luckily, they will have Dave Schmillen to help them.

The Iowa chop is still there in the Hy-Vee meat case, as juicy and flavorful as ever. But now it’s called a Porterhouse, as part of the nomenclature change to help consumers understand various pork cuts and increase demand.

Schmillen, the meat department manager for the Spencer Hy-Vee store, said the revised nomenclature on pork labels hasn’t slowed down his consumers from buying pork during October or any time this year.
