16-ounce container of full-fat cottage cheese

2 tablespoons extra virgin olive oil

2 onions, thinly sliced

2 garlic cloves, minced

1/2 cup water or broth

2 tablespoons balsamic vinegar

Salt and pepper, to taste


  1. Heat olive oil over medium heat. Cook and stir onions for 15 minutes or until tender. Reduce heat to low, stirring frequently.
  2. Stir in garlic, salt and pepper. Continue cooking for 15 minutes longer or until onions turn a deep golden-brown color.
  3. Add water or broth, and reduce until liquid has evaporated. Add balsamic vinegar, and remove from heat to cool to room temperature.
  4. Blend the cottage cheese in a blender or food processor until smooth. Then add onion mixture and more salt and pepper, to taste.
  5. Serve at room temperature or chilled, with cut vegetables, chips and/or whole-wheat crackers (such as Triscuits).
