Ingredients:
1 ½ lbs. pork loin
1 lb. green beans, fresh or frozen
1 ½ lbs. potatoes
Olive oil
½ tsp. salt
¼ tsp. pepper
½ tsp. chili powder

Spice Rub mix:
1 tsp. cumin
1 tsp. chili powder
½ tsp. garlic powder
½ tsp. salt
½ tsp. paprika
¼ tsp. pepper

Instructions:
Heat oven to 425 degrees. Mix spice rub mix. Pat tenderloin dry and rub with spice mix. Place pork in center of a sheet pan (covered with foil). Bake for 15 minutes. While pork is baking, toss green beans with 1 Tbsp. olive oil and sprinkle with ½ tsp. chili powder. Set aside. Cut potatoes lengthwise (as if making fries) and toss with 1 Tbsp. olive oil, salt and pepper.  
After the pork has baked for 15 minutes, take out of oven and add the green beans along one side of the pork, and on the other side add the potatoes. Cook an additional 20 minutes.
